Anniversary?

my husbands and I are going to be celebrating our 1 year anniversary coming up in August. We live in North Carolina..I was wondering if anybody had some great ideas as to what to do or where to go?..the surrounding states are fine but I dont want anything like "go shopping on rodeo drive for eachother" cause I am not going to California...i just want something simple..adventurous maybe??..your suggestions will be helpful
